Ingredients
- 1/2 lb (225 grams) pasta (spaghetti, penne, fusilli, or any shape)
- 3/4 cup (160 grams) cream cheese
- 1/4 cup (30 grams) grated parmesan cheese
- 1 tablespoon olive oil
- 1–2 garlic cloves, minced
- 1/2 cup (120 ml) pasta cooking water
- Salt and pepper to taste
- Optional: chili flakes for spice
Instructions
- Cook the pasta in salted boiling water according to package instructions until al dente. Reserve about 1 cup of cooking water before draining.
- In a skillet over low heat, warm olive oil and sauté minced garlic (and optional chili flakes) for 2–3 minutes.
- Add cream cheese and reserved pasta water to the skillet; stir until smooth.
- Mix in grated parmesan until well combined.
- Toss the drained pasta into the sauce until evenly coated. Adjust consistency with more reserved water if necessary.
- Serve immediately topped with extra parmesan and freshly ground black pepper.
