  • 3 cans quality tuna (wild-caught Albacore or Yellowfin)
  • 2 1/2 celery stalks, chopped
  • 1/2 English cucumber, chopped
  • 45 radishes, chopped
  • 3 green onions, chopped
  • 1/2 medium red onion, finely chopped
  • 1/2 cup Kalamata olives, halved
  • Fresh parsley and mint leaves
  • Zesty Dijon mustard dressing (Dijon mustard, lime zest & juice, olive oil)

Instructions

  1. Prepare the dressing by whisking together Dijon mustard, lime zest and juice, and olive oil. Season with sumac, salt, pepper, and optional crushed red pepper flakes.
  2. In a large bowl, combine drained tuna with chopped celery, cucumber, radishes, green onions, red onion, olives, parsley, and mint.
  3. Pour the dressing over the mixture and gently stir to coat everything evenly. Refrigerate for at least 30 minutes to enhance flavors.
  4. Serve chilled in pita bread or lettuce wraps or over roasted tomatoes.
