Ingredients
- 3 cans quality tuna (wild-caught Albacore or Yellowfin)
- 2 1/2 celery stalks, chopped
- 1/2 English cucumber, chopped
- 4–5 radishes, chopped
- 3 green onions, chopped
- 1/2 medium red onion, finely chopped
- 1/2 cup Kalamata olives, halved
- Fresh parsley and mint leaves
- Zesty Dijon mustard dressing (Dijon mustard, lime zest & juice, olive oil)
Instructions
- Prepare the dressing by whisking together Dijon mustard, lime zest and juice, and olive oil. Season with sumac, salt, pepper, and optional crushed red pepper flakes.
- In a large bowl, combine drained tuna with chopped celery, cucumber, radishes, green onions, red onion, olives, parsley, and mint.
- Pour the dressing over the mixture and gently stir to coat everything evenly. Refrigerate for at least 30 minutes to enhance flavors.
- Serve chilled in pita bread or lettuce wraps or over roasted tomatoes.
