  • 3 cups graham crumbs
  • 24 ounces full-fat cream cheese
  • 2 large apples (Granny Smith or Gala)
  • 1/2 cup unsalted butter
  • 3 large eggs
  • 3/4 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup quick oats
  • 1/2 teaspoon cinnamon
  • 1 tablespoon cornstarch (or 2 tablespoons all-purpose flour)
  • 1/2 cup sour cream (room temperature)
  • 2 tablespoons brown sugar (for apple filling)

Instructions

  1. Preheat your oven to 350F (180C).
  2. Wrap a 9-inch springform pan in tin foil to prevent water from seeping in.
  3. In a bowl, mix graham crumbs, brown sugar, cinnamon, and melted butter to form the crust. Press into the bottom of the pan.
  4. Prepare apple filling by slicing apples and mixing them with brown sugar and cinnamon.
  5. Make the cheesecake filling by beating cream cheese, sugars, cinnamon, cornstarch, vanilla extract, sour cream, and eggs until smooth.
  6. Layer apple filling over the crust, pour cheesecake mixture on top, and sprinkle with oatmeal crumble.
  7. Bake in a water bath for about 55 minutes until set; cool gradually before chilling overnight.
