Description

  • 125g / 1 stick unsalted butter, melted
  • 2 cups (300g) all-purpose flour
  • 1/2 cup (100g) white sugar
  • 1/2 tsp baking powder
  • Pinch of salt
  • 1 egg
  • 1/3 cup (30g) rolled oats
  • 34 large Granny Smith apples, cut into 0.7cm / 1/3" dice (~4 cups)
  • 1/4 cup (35g) all-purpose flour (for filling)
  • 1/4 cup (50g) white sugar (for filling)
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg

Instructions

  1. Preheat oven to 180C (350F).
  2. Grease and line a 20cm (8") square pan with baking paper.
  3. In a bowl, mix melted butter, flour, white sugar, baking powder, and salt until combined.
  4. Add the egg and stir until fully incorporated.
  5. Press two-thirds of the mixture into the bottom of the prepared pan and bake for about 15 minutes until slightly golden; cool for five minutes.
  6. Meanwhile, in another bowl, combine diced apples with flour, sugar, cinnamon, and nutmeg.
  7. Spread apple filling over the cooled base and crumble remaining dough on top.
  8. Bake for an additional 25–30 minutes until golden brown on top.
  9. Allow to cool before slicing into bars.
