  • ¼ teaspoon kosher salt
  • ¾ cup (170 g) unsalted butter (room temperature)
  • ¾ cup (150 g) granulated sugar
  • 2 large eggs (room temperature)
  • 2 teaspoons vanilla extract
  • ½ cup (122.5 g) whole milk
  • 2 ounces cream cheese (softened)
  • ½ cup (100 g) granulated sugar (for topping)
  • 2 cups (476 g) heavy cream
  • ½ teaspoon vanilla extract (for topping)
  • 1 pinch kosher salt (for topping)

Instructions

  1. Prepare the apple filling by sautéing diced apples with sugar, lemon juice, cinnamon, and butter until softened.
  2. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  3. Make the cupcake batter by creaming butter and sugar, then mixing in eggs and dry ingredients alternately with milk.
  4. Fill cupcake liners halfway with batter, add a spoonful of cooled apple filling, then top off with more batter.
  5. Bake for 20-25 minutes until a toothpick comes out clean; allow to cool completely before frosting.
  6. Prepare whipped cream by beating together cream cheese and heavy cream until stiff peaks form; frost cooled cupcakes.
