  • ¼ cup maple syrup (or brown sugar)
  • ¼ cup coconut aminos (or soy sauce)
  • 2 tsp rice vinegar
  • 2 cloves garlic, minced
  • 1 medium red bell pepper, finely diced
  • Boston Bibb lettuce leaves for wrapping
  • 2 tsp grated fresh ginger
  • ½ cup shredded carrots
  • 1 tbsp olive oil
  • ¼½ tsp red pepper flakes (optional)
  • 2 tsp arrowroot powder (or cornstarch)
  • kosher salt (to taste)
  • ground pepper (to taste)
  • sesame seeds (to taste, for garnish)

Instructions

  1. In a bowl, whisk together the maple syrup, coconut aminos, rice vinegar, and optional red pepper flakes. Add arrowroot powder and mix well.
  2. Heat olive oil in a skillet over medium-high heat. Add ground beef and cook until no longer pink (about 5 minutes).
  3. Stir in minced garlic and grated ginger; cook for another minute until fragrant.
  4. Add diced bell pepper and shredded carrots; sauté until tender yet crunchy (about 3-4 minutes).
  5. Pour the prepared sauce over the mixture, stirring well to combine. Let it simmer until slightly thickened (2-3 minutes). Season as needed with salt and pepper.
  6. Serve the beef mixture in lettuce leaves, garnished with sesame seeds.
