  • 60 saltine crackers
  • ½ cup unsalted butter (softened)
  • 3 tablespoons sugar
  • 14 oz. sweetened condensed milk
  • 4 egg yolks
  • ½ cup lemon juice
  • Fresh whipped cream (for garnish)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Crush saltine crackers into fine crumbs using a food processor or rolling pin.
  3. Mix crushed crackers with sugar and softened butter until combined.
  4. Press the mixture firmly into an 8-inch pie pan and chill for 15 minutes.
  5. Bake the crust for 18 minutes until lightly golden.
  6. In a bowl, beat egg yolks and sweetened condensed milk. Gradually add lemon juice until smooth.
  7. Pour filling into the cooled crust and bake for another 16 minutes until set but slightly jiggly in the center.
  8. Allow to cool completely before topping with fresh whipped cream and serving chilled.
