Description

Avocado Mango Salad is a vibrant and refreshing dish that’s perfect for summer gatherings or a quick, healthy lunch. This salad combines the creamy richness of ripe avocados with the sweet juiciness of mangoes, all enhanced by a zesty lime dressing.


Ingredients

  • 2 ripe avocados
  • 1 large ripe mango
  • 1/2 red onion
  • 1/2 cucumber
  • 1/4 cup fresh cilantro
  • 1 tablespoon olive oil
  • 1 tablespoon fresh lime juice
  • 1 teaspoon honey or agave syrup (optional)
  • Salt and pepper to taste

Instructions

  1. Peel and dice avocados and mango. Dice cucumber and finely chop red onion and cilantro.
  2. In a small bowl, whisk together olive oil, lime juice, honey (if desired), salt, and pepper.
  3. In a large bowl, gently toss diced avocados, mango, cucumber, red onion, and cilantro.
  4. Pour the dressing over the salad mixture and toss gently to coat.
