  • 1 rack baby back pork ribs (about 2 pounds)
  • 1 tablespoon smoked paprika
  • 1/2 tablespoon chili powder
  • 1/2 tablespoon garlic powder
  • 1/2 tablespoon brown sugar
  • 1 teaspoon salt
  • 1/3 cup (79ml) Bourbon (optional)
  • 3/4 cup (200g) Ketchup
  • 2 tablespoons dark brown sugar
  • 2 tablespoons apple cider vinegar
  • 3/4 tablespoon onion powder
  • 3/4 teaspoon garlic powder (or 1 minced garlic clove)
  • 3/4 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1 cup diced fresh peaches (about 4 small peaches)

Instructions

  1. Preheat your oven to 300°F (149°C).
  2. Combine rub ingredients: smoked paprika, chili powder, garlic powder, brown sugar, and salt.
  3. Prepare ribs by rinsing and removing silver skin; cut into halves.
  4. Apply the spice rub generously on both sides of the ribs and wrap them in aluminum foil.
  5. Bake for approximately 2 hours until the meat is tender.
  6. While baking, make the BBQ sauce by simmering bourbon (if using), ketchup, brown sugar, apple cider vinegar, onion powder, garlic powder, Worcestershire sauce, Dijon mustard, and diced peaches for 15 minutes.
  7. Preheat grill to medium-high heat; grill ribs for about 4-6 minutes per side while brushing with sauce.
