  • 2 pounds boneless, skinless chicken breasts
  • 3 tablespoons avocado oil (plus more for salad)
  • 2 cups BBQ sauce
  • 4 ears corn
  • 8 cups romaine lettuce
  • 16 ounces grape tomatoes
  • 1 can black beans
  • 1 avocado
  • Fresh herbs (cilantro, dill, basil)

Instructions

  1. Preheat grill over medium heat. Cut chicken into bite-sized pieces and marinate with avocado oil, salt, and half of the BBQ sauce for at least 10 minutes.
  2. Thread chicken onto skewers. Grill for 5-7 minutes per side until cooked through, brushing with remaining BBQ sauce.
  3. Grill corn until charred, then cool and cut kernels off the cob.
  4. In a large bowl, mix romaine lettuce, green onions, tomatoes, black beans, corn kernels, avocado, and fresh herbs.
  5. Drizzle with dressing (mix avocado oil, egg, coconut milk, lemon juice, vinegar, salt, onion powder, garlic, dill, parsley) and toss gently.
  6. Serve topped with grilled chicken skewers.
