  • 1/2 cup plain dried breadcrumbs
  • 1 large egg
  • 1/2 cup milk
  • 2/3 cup thick BBQ sauce
  • 2 teaspoons Kosher salt
  • 1 1/2 teaspoons chili powder
  • 1 teaspoon black pepper
  • 1 teaspoon ground cumin
  • 3/4 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 tablespoon Worcestershire sauce
  • 1 1/2 teaspoon unsalted liquid smoke
  • 1 small yellow onion, finely minced

Instructions

  1. Preheat the oven to 350°F (175°C) and line a rimmed sheet pan with nonstick foil.
  2. In a large mixing bowl, combine breadcrumbs, salt, chili powder, black pepper, ground cumin, garlic powder, and onion powder.
  3. Add milk, beaten egg, Worcestershire sauce, and liquid smoke; mix well.
  4. Incorporate ground beef and minced onion until just combined. Shape into a loaf on the prepared pan.
  5. Pour half of the BBQ sauce over the meatloaf and bake for 35 minutes. Add remaining sauce and bake for an additional 25 minutes.
