Ingredients

  • 2 lbs chuck roast (trimmed and cubed)
  • 3 tablespoons olive oil
  • 1½ cups carrots (chopped)
  • 1 cup celery (chopped)
  • 2 cups yellow onion (chopped)
  • 3 tablespoons tomato paste
  • 1½ tablespoons minced garlic
  • 64 oz low-sodium chicken or beef broth
  • 1 cup pearl barley
  • Fresh parsley (for garnish)

Instructions

  1. Sear the cubed chuck roast in olive oil until golden brown. Remove and set aside.
  2. In the same pot, sauté carrots, celery, and onion until softened.
  3. Stir in tomato paste and garlic; cook briefly until fragrant.
  4. Add broth, soy sauce, Worcestershire sauce, herbs, salt, pepper, and return seared beef to the pot.
  5. Simmer on low heat for 45–60 minutes until beef is tender.
  6. Stir in pearl barley; cover and simmer an additional 45–60 minutes until barley is cooked through.
  7. Garnish with fresh parsley before serving warm.
