- 1½ cups carrots (chopped)
- 1 cup celery (chopped)
- 2 cups yellow onion (chopped)
- 3 tablespoons tomato paste
- 1½ tablespoons minced garlic
- 64 oz low-sodium chicken or beef broth
- 1 cup pearl barley
- Fresh parsley (for garnish)
Instructions
- Sear the cubed chuck roast in olive oil until golden brown. Remove and set aside.
- In the same pot, sauté carrots, celery, and onion until softened.
- Stir in tomato paste and garlic; cook briefly until fragrant.
- Add broth, soy sauce, Worcestershire sauce, herbs, salt, pepper, and return seared beef to the pot.
- Simmer on low heat for 45–60 minutes until beef is tender.
- Stir in pearl barley; cover and simmer an additional 45–60 minutes until barley is cooked through.
- Garnish with fresh parsley before serving warm.
