  • 1 can (10 oz) diced tomatoes with green chiles
  • 1 can (6 oz) tomato paste
  • 1 package (12 oz) egg noodles
  • 1 cup sour cream (or plain Greek yogurt)
  • 2 cups shredded cheddar cheese
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat the oven to 350°F and grease a 9×13-inch baking dish.
  2. In a skillet over medium-high heat, brown the ground beef until crumbly; drain fat. Stir in diced tomatoes, tomato paste, garlic powder, onion powder, salt, and pepper; simmer for 15-20 minutes.
  3. Cook egg noodles according to package instructions until al dente; drain and toss with sour cream.
  4. Layer the creamy noodles in the baking dish followed by the beef mixture and top with cheddar, Parmesan, and mozzarella cheeses.
  5. Bake for 20-25 minutes until hot and bubbly.
