  • 2.5 kg / 5 lb standing rib roast (bone-in)
  • 150g unsalted butter
  • 5 garlic cloves (minced)
  • Fresh thyme
  • Fresh rosemary
  • Salt
  • Black pepper
  • 1.5 cups beef broth
  • 2.5 cups dry red wine

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Let the rib roast sit at room temperature for about an hour, then season generously with salt and pepper.
  3. In a bowl, mix softened butter with minced garlic and chopped herbs until well combined.
  4. Coat the roast with the herb butter mixture.
  5. Place quartered onion and halved garlic head in the roasting pan along with thyme and rosemary.
  6. Position the seasoned roast on top of the aromatics and pour beef broth and wine into the pan.
  7. Insert a meat thermometer into the thickest part of the roast and cook until desired doneness is achieved (about 2 hours).
  8. Let it rest for at least 20 minutes before slicing.
