Ingredients
- 2.5 kg / 5 lb standing rib roast (bone-in)
- 150g unsalted butter
- 5 garlic cloves (minced)
- Fresh thyme
- Fresh rosemary
- Salt
- Black pepper
- 1.5 cups beef broth
- 2.5 cups dry red wine
Instructions
- Preheat your oven to 325°F (163°C).
- Let the rib roast sit at room temperature for about an hour, then season generously with salt and pepper.
- In a bowl, mix softened butter with minced garlic and chopped herbs until well combined.
- Coat the roast with the herb butter mixture.
- Place quartered onion and halved garlic head in the roasting pan along with thyme and rosemary.
- Position the seasoned roast on top of the aromatics and pour beef broth and wine into the pan.
- Insert a meat thermometer into the thickest part of the roast and cook until desired doneness is achieved (about 2 hours).
- Let it rest for at least 20 minutes before slicing.
