  • 4 egg yolks (or 4 egg whites)
  • 3/4 cup sugar
  • 1 tsp vanilla extract
  • Pinch of salt
  • 1 1/2 cups heavy cream (or whipped egg whites)
  • ~30 ladyfingers
  • 1 1/2 cups strong black coffee
  • 2 tbsp cocoa powder for dusting

Instructions

  1. Brew strong black coffee and let it cool.
  2. In a mixing bowl, blend mascarpone, sugar, vanilla extract, and salt until smooth.
  3. In another bowl, whip heavy cream or egg whites to stiff peaks and gently fold into the mascarpone mixture.
  4. Dip ladyfingers quickly into the cooled coffee and layer half in a baking dish.
  5. Spread half of the mascarpone mixture over the ladyfingers.
  6. Repeat with another layer of dipped ladyfingers followed by the remaining mascarpone.
  7. Cover and refrigerate for at least four hours or overnight.
  8. Dust with cocoa powder before serving.
