Ingredients

  • 16 oz mascarpone cheese (450g), cold
  • 4 egg yolks
  • 3/4 cup sugar (165g)
  • 1 tsp vanilla extract
  • Pinch of salt
  • 1 1/2 cup heavy cream (360g) or 4 egg whites
  • ~30 ladyfingers
  • 1 1/2 cup strong black coffee
  • 2 tbsp cocoa powder for dusting

Instructions

  1. Brew coffee and let it cool in a shallow dish.
  2. In a mixing bowl, whisk together egg yolks, sugar, vanilla, and salt until pale and thickened. Gently mix in mascarpone cheese.
  3. Whip heavy cream (or egg whites) until stiff peaks form and fold into the mascarpone mixture.
  4. Dip ladyfingers quickly into cooled coffee and layer half at the bottom of a baking dish. Spread half of the mascarpone mixture over the ladyfingers.
  5. Repeat layering with remaining ingredients.
  6. Cover and chill for at least 4 hours or overnight. Before serving, dust with cocoa powder.
