Ingredients
- 16 oz mascarpone cheese (450g), cold
- 4 egg yolks
- 3/4 cup sugar (165g)
- 1 tsp vanilla extract
- Pinch of salt
- 1 1/2 cup heavy cream (360g) or 4 egg whites
- ~30 ladyfingers
- 1 1/2 cup strong black coffee
- 2 tbsp cocoa powder for dusting
Instructions
- Brew coffee and let it cool in a shallow dish.
- In a mixing bowl, whisk together egg yolks, sugar, vanilla, and salt until pale and thickened. Gently mix in mascarpone cheese.
- Whip heavy cream (or egg whites) until stiff peaks form and fold into the mascarpone mixture.
