  • 15 lb brisket
  • 1 cup beer
  • 1/4 cup apple cider vinegar
  • 1/4 cup beef stock
  • 5 tbsp melted butter
  • 2 tbsp garlic powder
  • 2 tbsp onion powder
  • 2 tbsp paprika
  • 2 tbsp chili powder
  • 2 tbsp kosher salt
  • 2 tbsp coarse ground black pepper
  • 1 tbsp brown sugar

Instructions

  1. Start your Traeger grill on Smoke mode until fire is established.
  2. Preheat grill to 225°F.
  3. Mix rub ingredients in a bowl and season all sides of the brisket generously.
  4. Place brisket fat side down on the grill.
  5. Cook until internal temperature reaches about 160°F (3-4 hours).
  6. Prepare baste mixture and wrap brisket in foil with baste added.
  7. Return to grill and cook until internal temperature reaches approximately 204°F (another 3-4 hours).
  8. Let it rest for 15 minutes before slicing against the grain.
