- 1 can (6 oz) tomato paste
- 1 can (15 oz) diced tomatoes (fire-roasted if possible)
- 2 cups beef broth (low-sodium preferred)
- 1 can (15 oz) red kidney beans, drained & rinsed
- 1 can (15 oz) black beans, drained & rinsed
Instructions
- In a large pot over medium heat, sauté diced onion in olive oil until softened (3–4 minutes).
- Add minced garlic and cook for 30 seconds until fragrant.
- Incorporate ground beef, breaking it into smaller pieces; cook until browned (5–7 minutes) and drain excess fat.
- Stir in chili powder, cumin, smoked paprika, cayenne (if using), salt, and pepper; bloom spices for 1 minute.
- Mix in tomato paste, then add diced tomatoes and beef broth; stir to combine.
- Add drained beans; simmer uncovered for 30–40 minutes until desired thickness is reached.
- Taste and adjust seasonings as needed; serve hot with toppings of choice.
