  • 1/2 cup minced onion
  • 2 tablespoons minced garlic (about 6 garlic cloves)
  • 28 oz crushed tomatoes (low sodium)
  • 1 bay leaf
  • 1 teaspoon dried basil
  • 1 teaspoon dried parsley
  • 1 teaspoon dried oregano
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 4 cups beef broth (low sodium)
  • 2 cups water
  • 2 cups reginetti pasta or broken lasagna noodles
  • 1/4 cup ricotta cheese (optional)
  • 1/4 cup parmesan cheese (optional)
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. In a large pot, heat olive oil over medium-high heat. Add ground beef and cook until browned (about 10 minutes).
  2. Stir in minced onion and garlic; sauté until onions are translucent.
  3. Add crushed tomatoes, bay leaf, herbs, black pepper, and optional red pepper flakes; mix well.
  4. Pour in beef broth and water; bring to a boil while stirring occasionally.
  5. Once boiling, add pasta and cook uncovered for half of the recommended time on the package.
  6. Remove from heat and let sit for 5 minutes; discard bay leaf before serving.
  7. Ladle into bowls; top with ricotta and parmesan if desired.
