  • 4 cups cooked Jasmine or Basmati rice (refrigerated)
  • 1 cup small/medium shrimp, cleaned and deveined
  • 2 tbsp unsalted butter
  • 1 tbsp vegetable oil
  • 1 tsp minced ginger
  • 1 tsp minced garlic
  • 1 small red onion, chopped
  • 1 cup frozen peas and carrots
  • 2 small eggs
  • 1 tsp brown sugar
  • 1 tsp sesame oil
  • 1 tsp oyster sauce
  • 2 tsp rice wine vinegar
  • 2 tbsp dark soy sauce
  • 1 tsp water
  • 1/4 tsp white pepper powder
  • Salt as needed

Instructions

  1. Prepare the rice by soaking it before cooking and refrigerate overnight.
  2. Mix sauce ingredients in a bowl.
  3. Whisk eggs with salt and pepper; set aside.
  4. Marinate shrimp with half of the sauce mix.
  5. Cook shrimp in butter until pink; remove from pan.
  6. Scramble eggs in the same pan; set aside.
  7. Sauté ginger and garlic in remaining butter and oil until fragrant.
  8. Add onions and frozen vegetables; cook until softened.
  9. Stir in refrigerated rice, shrimp, and scrambled eggs; break up any lumps.
  10. Pour in remaining sauce mix; toss until heated through.
  11. Garnish with chopped spring onion greens before serving.
