- 1 can corn (drained) or fresh corn
- 1/2 cup uncooked white rice
- Red onion (chopped)
- Fresh cilantro (chopped)
- Olive oil
- Lime juice and zest
- Honey
- Chili powder
- Garlic powder
- Salt & pepper
Instructions
- Cook the rice according to package directions; let cool.
