  • 1 can corn (drained) or fresh corn
  • 1/2 cup uncooked white rice
  • Red onion (chopped)
  • Fresh cilantro (chopped)
  • Olive oil
  • Lime juice and zest
  • Honey
  • Chili powder
  • Garlic powder
  • Salt & pepper

Instructions

  1. Cook the rice according to package directions; let cool.
  2. In a small bowl, whisk together olive oil, lime juice and zest, honey, chili powder, and garlic powder.
  3. In a large mixing bowl, combine diced avocado, black beans, corn, red onion, cilantro, and cooled rice.
  4. Pour the dressing over the salad and gently toss until well combined; season with salt and pepper.
  5. Chill in the refrigerator for at least one hour before serving.
