  • 1 recipe blueberry pie filling (about 3 cups)
  • 1½ cups fresh blueberries
  • ½ cup powdered sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla paste
  • Zest and juice of 1 lemon
  • 1 teaspoon ground cinnamon
  • 3 uncooked 9" pie crusts
  • 1 egg (for egg wash)
  • 1 tablespoon water (for egg wash)
  • Coarse sugar for topping

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine fresh blueberries, powdered sugar, cornstarch, vanilla paste, lemon zest and juice, and cinnamon. Mix well.
  3. Roll out two pie crusts and place one in your pie dish as the base. Pour the blueberry filling evenly into the crust.
  4. Roll out the third crust; create a lattice top or cover directly over the filling, cutting slits for steam to escape if using a full crust.
  5. Whisk together the egg and water for an egg wash; brush over the top crust.
  6. Sprinkle coarse sugar on top before baking.
  7. Bake on a baking sheet for about 30 minutes until golden brown and bubbly.
