  • 2 cups cherry tomatoes
  • 1 tablespoon olive oil
  • 2 tablespoons basil pesto
  • 5 cloves garlic (minced)
  • 1 cup sour cream
  • 8 ounces fresh mozzarella (cut into chunks)
  • 8 ounces shredded provolone cheese
  • ¼ cup freshly grated parmesan cheese
  • Fresh basil for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a baking dish, toss cherry tomatoes with olive oil, basil pesto, minced garlic, salt, and pepper. Bake for 15 minutes.
  3. While tomatoes roast, mix sour cream and chopped basil in a bowl. Add mozzarella, provolone, and parmesan; stir until combined.
  4. Once tomatoes are roasted, pour cheese mixture over them and gently toss. Top with halved cherry tomatoes.
  5. Return to the oven and bake for another 20 minutes until cheese is melted and bubbly. Garnish with fresh basil before serving.
