  • 1 pound ground beef
  • 1 pound ground pork
  • 1 large egg
  • 1 cup ricotta cheese
  • 1/3 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper (to taste)
  • 1 cup pork rind crumbs
  • 1 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons unsalted butter
  • 1 1/2 teaspoons minced garlic
  • Optional: 1/4 teaspoon paprika
  • Optional: Fresh basil (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C) and grease a baking dish.
  2. In a mixing bowl, combine ground beef, ground pork, egg, ricotta cheese, Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper.
  3. Shape the mixture into meatballs and roll in pork rind crumbs.
  4. Place meatballs in the baking dish and bake for 20 minutes until golden brown.
  5. For the sauce, melt butter in a skillet over medium heat. Add minced garlic and sauté until fragrant.
  6. Pour in heavy cream, season with salt and pepper, then stir in grated Parmesan until thickened.
  7. Combine meatballs with the sauce before serving.
