  • 1 pound ground pork
  • 1 large egg
  • 1 cup ricotta cheese
  • 1/3 cup grated Parmesan cheese

  • 1 teaspoon Italian seasoning

  • 1 cup pork rind crumbs
  • 1 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons unsalted butter
  • 1 1/2 teaspoons minced garlic
  • Optional: 1/4 teaspoon paprika
  • Optional: Fresh basil, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C) and grease a baking dish.
  2. In a mixing bowl, combine ground beef, ground pork, egg, ricotta cheese, Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper. Mix well.
  3. Shape the mixture into small meatballs and roll each in pork rind crumbs.
  4. Place meatballs in the baking dish and bake for about 20 minutes until browned.
