  • 1 cup light brown sugar (packed)
  • 1 large egg
  • 1 tablespoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon ground cinnamon

  • 1/4 teaspoon salt
  • 1 cup shredded carrots
  • 4 ounces cream cheese (room temperature)
  • 1/4 cup granulated sugar
  • 1 large egg yolk
  • 3/4 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F. Prepare an 8×8 baking pan with non-stick spray or parchment paper.
  2. In a mixing bowl, combine melted butter and brown sugar. Mix in egg and vanilla until smooth.
  3. In another bowl, sift together flour, cinnamon, baking powder, and salt. Gradually blend into wet ingredients and fold in shredded carrots.
  4. Pour batter into the prepared pan and spread evenly.
  5. In a separate bowl, beat cream cheese with granulated sugar until smooth. Add egg yolk and vanilla; mix well.
  6. Spread the cream cheese mixture over the carrot cake batter.
  7. Bake for about 40 minutes or until a toothpick comes out clean. Allow cooling before slicing.
