  • 1 head cauliflower (about 5 cups), chopped into florets
  • 2 slices bacon, chopped
  • 1 tablespoon olive oil
  • ¼ cup yellow onion, diced
  • 3 garlic cloves, minced
  • 1 cup almond milk (or milk of choice)
  • 2 tablespoons all-purpose flour (or tapioca flour for gluten-free)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded parmesan cheese
  • ½ teaspoon salt
  • Chopped chives for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet over medium heat, cook the chopped bacon until crispy. Remove with a slotted spoon and set aside, reserving the grease.
  3. Boil water in a saucepan and add cauliflower florets; cook for 5 minutes before draining.
  4. In the skillet with reserved grease, sauté onion and garlic until translucent (3–5 minutes).
  5. Whisk together almond milk and flour in a small bowl; pour into the skillet and bring to a low boil.
  6. Add cheddar, parmesan, and salt, whisking until smooth.
  7. Combine drained cauliflower with the cheese sauce until well coated.
  8. Transfer to an 8×8-inch baking dish, sprinkle cooked bacon on top, and bake for about 20 minutes or until golden.
