  • 1 pound lean ground beef
  • 1 medium onion (chopped)
  • 4 cloves garlic (minced)
  • 1 cup frozen mixed vegetables
  • 1 (10.5 ounce) can condensed cream of mushroom soup
  • 1 cup milk (2% recommended)
  • 1/2 cup sour cream
  • 2 cups shredded cheddar cheese (divided)

Instructions

  1. Preheat oven to 400°F.
  2. Grease a 9×13 casserole dish and spread diced potatoes evenly across the bottom.
  3. In a skillet, cook ground beef and onion over medium heat until browned; drain excess fat.
  4. Stir in garlic and frozen vegetables; cook for another 3 minutes before seasoning with salt and pepper.
  5. Spread the meat mixture over the potatoes in the casserole dish.
  6. In a bowl, mix together soup, milk, sour cream, half of the cheddar cheese, and Italian seasoning until smooth.
  7. Pour sauce evenly over the layers and gently stir to combine.
  8. Cover with aluminum foil and bake for 45 minutes.
  9. Remove foil, sprinkle remaining cheese on top, and bake uncovered for an additional 10-15 minutes until cheese is melted and potatoes are tender.
