  • 1 pound ground beef
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 2¼ cups beef broth
  • 1 (10 oz) can Rotel
  • 2 tablespoons tomato paste
  • 1½ cups long-grain white rice (dry, uncooked)
  • 2 cups shredded cheese

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add ground beef and diced onion; cook until beef is browned and onions are translucent.
  2. Stir in minced garlic and taco seasoning; cook briefly until fragrant.
  3. Pour in beef broth, Rotel, and tomato paste; bring to a boil.
  4. Stir in rice and return to a boil. Cover and reduce heat to low; simmer for 15 minutes.
  5. Sprinkle shredded cheese on top; cover again until cheese melts (about 5 minutes).
