  • 2 boneless, skinless chicken breasts (or 2 cups rotisserie chicken)
  • 1¼ cups uncooked white long-grain rice
  • 2½ cups chicken broth
  • 2 cups fresh or frozen broccoli florets
  • 10.5 oz condensed cream of chicken soup
  • ½ cup milk
  • ½ cup sour cream
  • 2 cups shredded cheddar cheese
  • 1 cup crushed Ritz crackers

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cut chicken into bite-sized pieces and season with Italian seasoning, salt, and pepper.
  3. In a large pot over medium heat, melt butter and cook chicken until golden brown (about 5 minutes). Remove from heat.
  4. In the same pot, add chicken broth, olive oil, and rice; bring to a boil. Reduce heat and simmer for 6 minutes.
  5. Add broccoli to the pot; cover and cook for another 9 minutes until rice is tender. Let sit for 10 minutes off heat.
  6. Stir in the cooked chicken, cream of chicken soup, milk, sour cream, half the cheese; mix well.
  7. Transfer mixture to a greased casserole dish and top with remaining cheese. Cover with foil and bake for 15 minutes.
  8. Combine melted butter with crushed crackers; sprinkle over casserole after removing foil. Bake uncovered for another 10 minutes until golden.
