  • 3 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons fajita seasoning
  • 1 medium red bell pepper
  • 1 medium green bell pepper
  • 2 large onions
  • 1 cup Tex-Mex cheese
  • 8 tortillas

Instructions

  1. Season the chicken strips with fajita seasoning.
  2. Heat olive oil in a skillet over medium heat; cook chicken until fully cooked and slightly charred. Remove from skillet.
  3. Sauté onions for 2 minutes; add bell peppers and remaining seasoning, cooking until tender.
  4. Return chicken to the skillet and mix well.
  5. In another skillet, melt butter and place a tortilla inside. Fill half with the chicken mixture and cheese, fold over.
  6. Cook until golden brown on both sides and cheese melts.
  7. Repeat with remaining tortillas and serve hot.
