Ingredients
- 1 1/4 lbs chicken breast
- 1/4 cup all-purpose flour
- 2 Tbsp olive oil
- 1 Tbsp unsalted butter
- 8 oz brown button mushrooms
- 3/4 cup dry marsala wine
- 3/4 cup chicken stock
- 1/2 cup heavy whipping cream
- Fresh parsley for garnish
Instructions
- Prepare the chicken by cutting it into cutlets and seasoning with salt and pepper. Dredge in flour.
- Heat olive oil and butter in a large pan over medium heat. Cook the chicken until golden brown (about 3–4 minutes per side). Remove from the pan.
- Sauté mushrooms in the same pan until browned. Add onion powder and minced garlic; cook briefly until fragrant.
- Pour in the marsala wine, scraping the bottom of the pan to deglaze. Reduce for about 5 minutes.
- Stir in chicken stock and cream, simmering until thickened (about 4–5 minutes). Season to taste.
- Return chicken to the pan, sprinkle with parsley, and heat through.
