Ingredients

  • 1.5 lbs diced chicken breast
  • 1 large zucchini, grated or thinly sliced
  • ½ yellow onion, diced
  • 1 pint grape tomatoes
  • 1.5 cups basmati rice (uncooked)
  • 3 cups chicken stock
  • ¼ cup crumbled feta cheese
  • Tzatziki sauce and pickled red onions for serving

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a small bowl, mix smoked paprika, seasoning salt, turmeric, and cayenne pepper.
  3. In a casserole dish, combine diced chicken with half the spice mixture and Greek seasoning; spread evenly.
  4. Layer rice over chicken followed by zucchini and grape tomatoes.
  5. Whisk together chicken stock with remaining spices and pour over casserole.
  6. Top with feta cheese and lemon wedges; cover with foil and bake for 40 minutes.
  7. Remove foil and bake for an additional 10-20 minutes until rice is tender.
  8. Fluff the casserole before serving; garnish with extra feta, pickled onions, tzatziki sauce, and parsley.
