  • 1 lb Ground Beef
  • 1 medium Onion (diced)
  • 14.5 oz Diced Tomatoes (canned, undrained)
  • 1/2 cup Water
  • 2 Tbsp Taco Seasoning
  • 16 oz Elbow Macaroni
  • 2 cups Cheddar Cheese (shredded, divided)

Instructions

  1. Cook the elbow macaroni in boiling water until al dente, then drain.
  2. In a large skillet over medium heat, brown the ground beef with diced onion until no longer pink. Drain excess fat.
  3. Stir in diced tomatoes, water, and taco seasoning; simmer for 5 minutes.
  4. Combine the meat mixture with cooked pasta.
  5. Layer half of the mixture in a greased 13×9 baking pan; top with 1 cup of cheddar cheese, then add the remaining mixture.
  6. Cover with foil and bake at 350°F for 30 minutes. Remove foil, top with another cup of cheese, and bake uncovered for an additional 10 minutes until bubbly.
