  • 2 cups shredded rotisserie chicken breast
  • 1 head romaine lettuce, shredded
  • 1 head iceberg lettuce, shredded
  • 1 cup shredded red cabbage
  • 1 cup shredded carrots
  • 1/4 cup thinly-sliced green onions
  • 3 tablespoons chopped cilantro (optional)
  • Asian salad dressing (homemade or store-bought)
  • crushed red pepper flakes
  • sesame seeds
  • slivered almonds
  • crispy wonton strips

Instructions

  1. In a large bowl, combine the shredded chicken and half of the Asian dressing. Toss to coat and let marinate for at least 10 minutes.
  2. Add the romaine, iceberg lettuce, red cabbage, carrots, green onions, and cilantro to the chicken. Toss gently to mix.
  3. Pour the remaining dressing over the salad mixture and toss until everything is evenly coated.
