- Prepare your workspace by lining two baking sheets with parchment paper.
- Wash the strawberries thoroughly and pat them dry. Allow them to reach room temperature for one to two hours.
- Melt 8 ounces of chopped chocolate in a microwave-safe bowl in 20-30 second intervals at 50% power, stirring until smooth. Use an instant read thermometer to ensure dark chocolate does not exceed 115ºF and milk or white chocolate does not exceed 110ºF.
- Temper the melted chocolate by adding the remaining chopped chocolate gradually until fully melted and at the ideal dipping temperature (89-90°F for dark/semi-sweet; 87°F for milk/white).
- Dip each strawberry by holding it by the stem, allowing excess chocolate to drip off before placing it on the parchment-lined baking sheet.
- Let the dipped strawberries set at room temperature for about 15-20 minutes before serving.
