  • 1 tbsp sugar
  • 1 tsp curry powder
  • 1/2 tbsp chili powder (optional)
  • 1/4 cup olive oil
  • 1.5 to 2 tbsp vegetarian mushroom oyster sauce
  • 1 tbsp dark soy sauce
  • 2 tbsp lime juice

Instructions

  1. Cook noodles according to package instructions until slightly undercooked; drain and rinse under cold water.
  2. In a large heat-proof bowl, mix cilantro, garlic, shallot, curry powder, sugar, and chili powder.
  3. Heat oil in the same pot over medium heat until hot; test with garlic.
  4. Pour hot oil over the herb mixture and stir well.
  5. Add mushroom oyster sauce, soy sauce, and lime juice; mix thoroughly.
  6. Toss in cooked noodles until evenly coated; adjust seasoning if needed.
