- 3 overripe bananas
- 4 tbsp melted vegan butter
- 3/4 cup maple syrup
- 1 cup almond or oat milk
- 1 1/2 cups all-purpose or gluten-free flour
- 1 tsp cinnamon
- 1 1/2 tsp baking powder
- 1 tsp baking soda
- 1/4 tsp salt
- 1 cup old fashioned rolled oats
- 4 tbsp melted vegan butter (for cinnamon swirl)
- 1/3 cup light brown sugar
- 2 tbsp cinnamon (for cinnamon swirl)
- 3/4 cup powdered sugar (for cream cheese glaze)
- 2 tbsp melted vegan butter (for cream cheese glaze)
- 2 oz softened vegan cream cheese
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, mash the bananas and combine with melted vegan butter, maple syrup, almond milk, and vanilla.
- In another bowl, whisk together baking powder, baking soda, cinnamon, salt, flour, and oats.
- Mix dry ingredients into the wet mixture until just combined.
- For the cinnamon swirl, combine melted vegan butter with brown sugar and cinnamon.
- Layer half the batter in a greased loaf pan, drizzle with half the swirl mixture, add remaining batter followed by the rest of the swirl. Gently swirl using a knife.
- Bake for about 45 minutes or until a toothpick comes out clean.
