- ¼ cup milk
- 2 egg yolks
- ½ cup grated pecorino Romano cheese
- 2 garlic cloves
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 1 pound ground beef chuck
- 1 pound ground pork
- ⅓ cup chopped parsley
Instructions
- Soak the breadcrumbs in milk for about 5 minutes. Then mix in egg yolks, cheese, garlic, salt, and pepper until combined.
- In a separate bowl, combine the ground beef and pork. Gently mix in the soaked breadcrumb mixture and chopped parsley until just combined.
- Using a measuring cup or scoop, portion out the mixture and roll into balls.
