  • 4 ribs celery (finely diced)
  • 1 green bell pepper (finely diced)
  • 1 red bell pepper (finely diced)
  • ½ cup red onion (finely diced)
  • 2 hard-boiled eggs (chopped)
  • ½ cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon red wine vinegar
  • ½ teaspoon dill pickle juice
  • 2 teaspoons granulated sugar
  • Salt and black pepper to taste

Instructions

  1. Cook elbow macaroni in boiling water until al dente; drain and rinse under cold water.
  2. Chop vegetables and hard-boiled eggs into small pieces while pasta cools.
  3. In a large bowl, mix cooled pasta with chopped veggies and eggs.
  4. In a separate bowl, combine mayonnaise, Dijon mustard, red wine vinegar, dill pickle juice, sugar, salt, and pepper; mix until smooth.
  5. Pour dressing over pasta mixture; toss gently to coat.
  6. Cover with plastic wrap and refrigerate for at least one hour before serving.
