  • 1 rotisserie chicken, shredded
  • 8 cups lower-sodium chicken broth
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 2 cups uncooked wide egg noodles

Instructions

  1. Heat olive oil in a large Dutch oven over medium-high heat. Add onion, carrots, celery, and garlic; sauté for about 8 minutes until softened.
  2. Stir in shredded rotisserie chicken and chicken broth; add Italian seasoning, salt, and pepper. Bring to a boil, then reduce heat to medium and simmer for 6 minutes.
  3. Add uncooked egg noodles to the pot and stir. Reduce heat to medium-low; simmer for another 6 minutes until noodles are tender.
