  • ½ cup vegan butter
  • ½ cup + 2 tablespoons pure maple syrup

  • 1¾ cups gluten-free flour
  • ⅛ teaspoon pink Himalayan salt
  • ½ cup mini dairy-free chocolate chips
  • 2½ cups vanilla non-dairy ice cream

Instructions

  1. Prepare your freezer by lining a rimmed baking sheet with parchment paper.
  2. In a bowl or mixer, combine the flax egg, melted vegan butter, maple syrup, and vanilla until smooth.
  3. Add gluten-free flour and pink salt; mix until a soft dough forms.
  4. Fold in chocolate chips and transfer the dough to the baking sheet.
  5. Flatten the dough into a rectangle and freeze for at least 40 minutes until firm.
  6. Cut the dough in half, spread softened ice cream on one side, and top with the other half.
  7. Freeze again for at least 4 hours before slicing into sandwiches.
