- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 4 (8 oz each) blocks cream cheese, softened
- 1 cup granulated sugar
- 1 cup sour cream
- 1/4 cup all-purpose flour
- 4 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup cotton candy, torn into small pieces
- For garnish: additional cotton candy
Instructions
- Preheat your oven to 325°F (163°C). In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined. Press into the bottom of a springform pan and bake for 10 minutes. Let cool.
- In a large bowl, beat softened cream cheese until smooth. Add sugar and mix well. Incorporate sour cream and flour until blended. Add eggs one at a time, mixing after each addition. Stir in vanilla and cotton candy pieces.
- Pour filling over cooled crust and smooth the top. Bake for 60-70 minutes until slightly jiggly in center. Turn off the oven but leave cheesecake inside with door ajar for about an hour to cool gradually. Refrigerate for at least 4 hours before serving.
- Whip heavy cream and powdered sugar until stiff peaks form. Spread or pipe over cooled cheesecake and garnish with additional cotton candy before serving.
