  • 15 oz. black beans (drained and rinsed)
  • 15.25 oz. whole kernel sweet corn (drained)
  • 1 small red bell pepper (diced)
  • 1 jalapeno pepper (minced)
  • 1/3 cup fresh cilantro (finely chopped)
  • ¾ cup diced red onion
  • 2 avocados (diced)
  • ¼ cup lime juice
  • 2 tablespoons red wine vinegar
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • 1 tablespoon honey
  • ¼ teaspoon chili powder

Instructions

  1. In a small bowl, whisk together the lime juice, red wine vinegar, salt, black pepper, honey, and chili powder for the dressing.
  2. In a large mixing bowl, combine black beans, corn, diced red bell pepper, minced jalapeno pepper, chopped cilantro, diced red onion, and diced avocados. Gently toss until mixed.
  3. Pour the dressing over the salad mixture and carefully toss until everything is evenly coated.
