  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 stalk celery, finely chopped
  • 1 small carrot, grated
  • 3 tablespoons all-purpose flour
  • 3 cups seafood stock or fish broth
  • 1 cup heavy cream
  • ½ cup dry white cooking wine (or non-alcoholic substitute)
  • 1 cup lump crab meat
  • 1 cup medium shrimp, peeled and deveined
  • smoked paprika
  • Old Bay seasoning
  • cayenne pepper (optional)
  • fresh parsley

Instructions

  1. In a heavy-bottomed pot, melt the butter and olive oil over medium heat. Add the onion, garlic, celery, and carrot; sauté until soft.
  2. Sprinkle in the flour while stirring constantly to form a roux. Cook for about 2 minutes until lightly golden.
  3. Gradually add seafood stock while stirring to avoid lumps. Stir in heavy cream and wine; bring to a gentle simmer for 10 minutes.
  4. Fold in crab meat and shrimp; cook until shrimp are pink (about 5-7 minutes).
  5. Season with smoked paprika, Old Bay seasoning, and cayenne pepper if desired.
  6. Serve hot garnished with parsley and paprika alongside crusty bread or oyster crackers.
