  • 1 teaspoon fresh lemon thyme (or regular thyme)
  • 1 teaspoon fresh lemon juice
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper

Instructions

  1. Prepare the asparagus by washing and chopping it into small pieces. Reserve some tips for garnish.
  2. In a pot or Dutch oven, melt butter over medium heat. Add onions, chopped asparagus, salt, and pepper; sauté for 3-4 minutes until softened. Stir in garlic and cook for an additional 10-15 seconds.
  3. Pour in the vegetable broth and bring to a simmer. Cover slightly and cook on medium-low heat for 15 minutes.
  4. Blend the soup until smooth using a blender; return it to the pot.
  5. Add heavy cream, lemon juice, and thyme; simmer uncovered until thickened.
  6. Garnish with reserved asparagus tips and serve warm.
