  • 0.5 cup Marsala wine
  • 6 tablespoons all-purpose flour
  • 4 cups low sodium chicken broth
  • 1 cup heavy cream
  • Fresh parsley and thyme for garnish

Instructions

  1. In a large pot, melt butter and oil over medium-high heat. Sauté onions for 2-3 minutes until softened, then add garlic and cook for another minute.
  2. Stir in sliced mushrooms and thyme, cooking for about 5 minutes. Pour in Marsala wine and let it simmer for an additional 3 minutes.
  3. Sprinkle flour over the mixture, stirring well before adding the chicken broth. Bring to a boil, then reduce heat to low-medium and season with salt, pepper, and crumbled bouillon cubes.
  4. Cover and let the soup simmer for 10-15 minutes until thickened.
  5. Reduce heat to low; stir in heavy cream and gently simmer without boiling.
  6. Finish with chopped parsley and thyme before serving warm.
