  • 12 oz penne pasta
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup diced tomatoes (canned or fresh)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 tsp Cajun seasoning
  • 1 tbsp olive oil
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional)

Instructions

  1. In a large pot over medium heat, heat olive oil and cook the sliced Cajun sausage until browned, about 5 minutes. Remove and set aside.
  2. In the same pot, sauté diced onion and minced garlic until the onion is translucent, about 3-4 minutes.

  4. Add uncooked penne pasta and cooked sausage to the pot; stir well and cook for 10-12 minutes until pasta is al dente.
