  • 1 pound Yukon gold potatoes, cubed
  • 1 ¼ pounds sirloin steak, cubed
  • ¼ cup ghee or butter
  • 1 tablespoon olive oil
  • 3 garlic cloves, minced
  • Dried thyme
  • Dried oregano
  • Sea salt
  • Black pepper
  • Fresh parsley for garnish

Instructions

  1. In a large cast iron skillet over medium heat, combine olive oil and 2 tablespoons of ghee. Add the cubed potatoes along with minced garlic, thyme, oregano, sea salt, and black pepper. Cook until golden brown and tender (approximately 8-10 minutes). Set aside.
  2. Increase heat to medium-high and add the remaining ghee along with seasoned steak cubes. Sear undisturbed for about 2 minutes until browned; continue cooking until desired doneness is reached.
  3. Return the cooked potatoes to the skillet with the steak and gently stir to combine.
  4. Garnish with fresh parsley before serving hot.
