  • 2 tablespoons ghee or sunflower oil
  • 1 medium onion, chopped
  • 500 grams chicken breasts, cut into bite-sized pieces
  • 3 cloves garlic, minced
  • 1 tablespoon minced ginger
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon garam masala
  • 1 teaspoon mild chili powder
  • 1 teaspoon ground turmeric
  • Salt to taste
  • 1 teaspoon white pepper
  • 200 grams tomato purée
  • 200 grams full-fat plain yogurt
  • 200 ml coconut cream
  • 50 grams ground almonds (optional)
  • 1 tablespoon sugar
  • 100 ml double cream
  • Fresh coriander for garnish

Instructions

  1. Heat ghee or oil in a large skillet over medium heat.
  2. Sauté chopped onions until translucent (about 5 minutes).
  3. Add minced garlic and ginger; cook for another 2 minutes.
  4. Cook chicken pieces until browned on all sides (about 5-7 minutes).
  5. Sprinkle spices over the chicken and stir to coat.
  6. Pour in tomato purée; let simmer for about 5 minutes.
  7. Reduce heat; mix in yogurt, coconut cream, ground almonds (if using), sugar, and double cream. Simmer gently for another 5-10 minutes.
  8. Garnish with fresh coriander before serving.
